Sago Sep: fontes alimentares tradicionais no leste da Indonésia e o seu potencial como alimentos alternativos para atletas

Resumo

As fontes de alimento em todo o mundo dependem da disponibilidade local na natureza. Na Indonésia, particularmente na parte oriental, uma das fontes alimentares disponíveis natural e localmente é o sagu, que é transformado em vários alimentos tradicionais para satisfazer as necessidades diárias da comunidade. Além de satisfazer a procura de alimentos, o sagu também possui valor cultural. Este estudo examina o processamento de sagu em cozinhas tradicionais na parte sul da Papua, na Indonésia, com dados recolhidos através de um inquérito. Os resultados mostram que o povo indígena Marind Anim processa o sagu em diferentes alimentos tradicionais: papeda, sagu assado ou pratos de sagu e sep sagu. O Sago sep é um alimento tradicional da tribo Marind Anim, comummente encontrado nas terras baixas de Merauke. Enquanto isso, os pratos de papeda e sagu são influenciados pela comunidade migrante composta pelos povos indígenas do norte da Papua e do Maollucan. Os tipos de sep sagu são Teta, Komabo, Nggalamo, Ebayak, Kwetahuk e Sinoli sep sagu, que se distinguem de acordo com os ingredientes adicionais que o compõem. A população local de Marind Anim ainda depende do sagu para satisfazer as suas necessidades alimentares. Colhem o sagu que cresce naturalmente no ambiente e transformam-no em alimentos como o sagu sep, a papeda e os pratos de sagu. Além disso, o sagu pode ser uma fonte alimentar alternativa para os atletas, especialmente no leste da Indonésia, devido ao seu elevado teor de hidratos de carbono e calorias, embora deva ser combinado com outros alimentos para satisfazer as necessidades energéticas dos atletas.
